Ingredients:
1 pound shrimp, peeled & deveined
3 cups potatoes, diced
1 onion
2 gloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy whipping cream
2 tablespoons all-purpose flour
1 cup corn kernels
4 slices of bacon
2 tablespoons butter
Sale & pepper to taste
Fresh parsley, chopped (for garnish)

Instructions:

In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon drippings in the pot.

Add the diced onion to the pot and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until you really smell the garlic.

Stir in the diced potatoes and corn kernels, then pour in the chicken or vegetable broth. Bring the mixture to a simmer and cook until the potatoes are tender, about 15-20 minutes.

In a separate small saucepan, melt the butter over medium heat. Whisk in the flour to create a roux and cook for 1-2 minutes until golden brown.

Slowly pour in the heavy whipping cream and whisk continuously to prevent and lumps from forming. Cook until the mixture thickens, then pour it into the pot with the chowder.

Add the peeled and deveined shrimp to the pot and cook for 3-5 minutes until the shrimp turn pink with a crisp to the edges.

Season your chowder with salt and pepper to taste, adjusting the seasonings as needed.

Now your Shrimp Chowder is ready to serve, garnished with crispy bacon pieces and chopped fresh parsley.

Enjoy these cold days inside with a warm chowder, this comfort food is perfect for the season!
